A light molded salad of diced apples, chopped walnuts and celery, with a fresh cider taste, is served with a mayonnaise dressing on the side. It is a delicious alternative to the usual Waldorf salad. |

for Dinner 8 servings Time to prepare: 15 minutes Difficulty: Average Ingredients1 pkg. unflavored gelatin1 3/4 cups cider or apple juice 2 Tbsp. lemon juice 1 1/2 cups diced red apples, unpeeled 1/2 cup diced celery 1/4 cup coarsely chopped walnuts Leaf lettuce, optional Grapes and watercress for garnish Mayonnaise Dressing: Combine 1/4 cup mayonnaise and 1/4 cup plain yogurt. Sprinkle with some chopped walnuts. |
DirectionsDissolve gelatin in >;> cup of the cider. Let stand 5 min. Heat and stir until gelatin is dissolved.Add remaining cider and lemon juice. Chill until mixture is the thickness of unbeaten egg whites. Fold in apples, celery and walnuts. Pour into a 1-quart mold. Cover and chill at least 2 hrs. or until firm. Unmold onto a plate lined with leaf lettuce, if you wish. Pass with the Mayonnaise Dressing in a side dish. Garnish with grapes and watercress. |
