Boston Mulled Cider

The flavor combination of fresh apple, orange, raisins, rum and star anise, gives an unusually pleasing taste to apple cider.

Ingredients

For 1/2 gallon hot cider you will need:

2 quarts apple cider
3/4 cup Triple Sec, Curacao or any other orange-flavored liqueur
or 2 Tbsp. non-alcoholic orange flower water
1/2 cup raisins
1 orange, sliced, unpeeled
1 apple, quartered, cored, unpared
1 lemon or lime. sliced
1/4 cup brown sugar, packed
5 pieces star anise, optional
1 tsp. ground nutmeg
1 stick cinnamon
1 tsp. whole allspice
8 whole cloves
1/3 cup dark rum, optional

Directions

In a large kettle, combine the cider, orange flavoring of your
choice, raisins, orange, apple, lemon slices, brown sugar, star anise, if used, nutmeg, cinnamon, allspice and cloves.

Bring to boiling. Reduce heat and simmer 10 min.

Just before serving, stir in the rum. if used. Ladle into mugs to
serve hot.

Notes

Orange flower water is available in the beverage sections of
gourmet grocery stores. Star anise is available in Oriental sections of
many supermarkets or in food specialty Oriental shops.
