Apple-Sage Stuffed Pork Chops

A flavorful stuffing fills these pork chops. Onion, celery, sage, coriander and apple season the whole wheat stuffing.

Ingredients

4 thick pork chops
1/4 cup chopped onion
1/4 cup chopped celery
2 Tbsp butter or margarine
1 cup whole wheat bread cubes
1apple, peeled, cored and diced
1 tsp. dried sage leaves
1/2 tsp coriander
1/4 cup all-purpose flour
1/2 tsp. salt
1/4 tsp. black pepper
1 tsp. oil
1t sp. butter or margarine
1/2 to 3/4 cup chicken broth

Directions

Cut a pocket in each pork chop. Trim fat.

Saute onion and celery until soft in the butter.

Add bread cubes, apple, sage and coriander. Mix well. Moisten with 2 Tbsp broth.

Stuff the chops. Hold together with toothpicks if you wish

Mix together the flour, salt and black pepper Dredge the chops in
mixture.

Heat oil and butter. Sear the chops. Pour remaining broth around
chops.

Cover. Cook on top of stove over low heat about 40 min. or until chops are tender. Turn once after 30 min.

Remove toothpicks before serving.

Notes

Good served with: Fried apples and a tossed green salad.
