Molded Apple Salad

A light molded salad of diced apples, chopped walnuts and celery, with a fresh cider taste, is served with a mayonnaise dressing on the side. It is a delicious alternative to the usual Waldorf salad.

Ingredients

1 pkg. unflavored gelatin
1 3/4 cups cider or apple juice
2 Tbsp. lemon juice
1 1/2 cups diced red apples, unpeeled
1/2 cup diced celery
1/4 cup coarsely chopped walnuts
Leaf lettuce, optional
Grapes and watercress for
garnish

Mayonnaise Dressing: Combine 1/4 cup mayonnaise and 1/4 cup plain yogurt. Sprinkle with some chopped walnuts.

Directions

Dissolve gelatin in >;> cup of the cider. Let stand 5 min. Heat and stir until gelatin is dissolved.

Add remaining cider and lemon juice. Chill until mixture is the thickness of unbeaten egg whites.

Fold in apples, celery and walnuts. Pour into a 1-quart mold. Cover and chill at least 2 hrs. or until firm.

Unmold onto a plate lined with leaf lettuce, if you wish. Pass with
the Mayonnaise Dressing in a side dish. Garnish with grapes and watercress.

Notes

Tips: Add a little crumbled blue cheese to the dressing. The sharp
blue cheese flavor is a tasty counterpoint to the sweetness of the apples. By thinning the mayonnaise with yogurt, you can cut the fat in half.
