Melon and Turkey

For a light, refreshing luncheon dish, team low-calorie turkey slices with melon, cantaloupe and cherry tomatoes.

Ingredients

1 lb. turkey slices
1 cantaloupe
1/2 honeydew melon
12 cherry tomatoes
Escarole or 1 head lettuce
Mint leaves for garnish

Dressing:

3 Tbsp. lemon juice
2 Tbsp. oil
1 Tbsp. water
1/4 tsp. dried tarragon leaves
1/8 tsp. dry mustard
Red pepper flakes, optional
Salt and white pepper

Directions

Roll the turkey slices. Cover and chill.

Quarter the cantaloupe. Discard seeds. Slice the cantaloupe but do not remove the peel.

Peel the honeydew melon and slice.

Prepare dressing by combining all ingredients in a bowl. Whisk until well blended.

When ready to serve, arrange turkey rolls, cantaloupe, melon,
tomatoes and escarole on individual plates. Drizzle dressing over
the turkey. Garnish with mint leaves.

Notes

Popular seasonal fruits can be substituted for the cantaloupe and
melon.
