my boyfriend wanted key lime pie, so i looked up some recipes on veg web. i found a recipe that called for vegan cream cheese and thought it would probably make a better cheesecake, but tried it anyway. here's what you'll need to make this dessert:
1 9-in unbaked vegan pie shell
2 8 oz. containers vegan cream cheese
2 tbsp soymilk
1 cup natural sugar (or choice of sweetener)
1 tsp vanilla
2 tsp grated lime peel
4 tbsp lime juice
2 tbsp cornstarch
sliced strawberries
Directions
1. preheat oven to 350 degrees.
2. blend cream cheese, soymilk, sweetener, vanilla, grated lime peel, lime juice and cornstarch until smooth.
3. pour mixture into unbaked vegan pie shell and bake for 40 minutes.
4. let cool to room temperature and refrigerate. top with sliced strawberries and serve.
Notes
if you are going to use a sugar substitute, remember to look up the conversion chart. for example, i use something called "Just Like Sugar" (1 tsp = 1 oz of regular sugar).
