Ingredients |
3 cups cooked, diced potatoes
3 Tbs. all-purpose flour
1 Tbs. minced onion
1/4 cup whipping cream or milk
1 tsp. salt
1/8 tsp. ground black pepper
3 Tbs. butter or margarine

Directions |
Combine potatoes with flour, onion, cream, salt and pepper. Heat butter in heavy skillet. Add potatoes. Pack in firmly to make an even layer. Brown over low heat for 20 minutes.
To serve, fold over like an omelette onto serving dish.
VARIATIONS:
Hasshed Potatoes with Cheese: Prepare as directed, but add 1/2 to 1 cup shredded Cheddar cheese to potato layer. Heat until cheese is melted, then fold over to serve.
Hashed Potatoes with Ham: Prepare as directed, but top potato layer with 1 cup finely diced cooked ham before foldeing over.
Hashed Potatoes with Vegetables: Prepare as directed. While potaotes cook, saute a combination of 1/2 cup diced green peppers, 1/2 cup diced tomatoes, 1/2 cup sliced green onion in 2 Tbs. butter or margarine. Sprinkle over potatoes before folding.
