Ingredients |
1 1/2 lbs. fresh fish fellets, such as salmon trout, bass or whitefish
1/4 cup milk
1/2 cup all-purpose flour
1 tsp. each salt and dried basil
1 egg, beaten
1/2 cup fine dry bread crumbs
1/3 cup melted butter or margarine
Parsley and lemon wedges for garnish

Directions |
Wash fish and pat dry. Cut into serving pieces. Dip fish first in milk, then in mixture of flour, salt and basil.
Add the egg to remaining milk. Add the crumbs to remaining flour mixture.
Dip fish pieces into mil-egg mixture. Place into buttered baking dish. Drizzle lwith melted butter.
Bake at 450 degrees for 10 minutes or until fish flakes when probed with fork. Garnish with parsley and lemon. Serve immediately.

| Good served with boiled new potatoes, buttered green beans or fresh asparagus and grated carrot salad. |
